Garlic

Garlic is seen by many as one of the kitchen's essential ingredients. It is grown in Scotland, as far north as Nairn. It is estimated that there are over 400 varieties of garlic. There are two main types, soft neck and hard neck garlic. The hard neck variety is the one that grows in Scotland and benefits from larger cloves than the soft neck which is typically grown in Spain and France. It is only when garlic is crushed that chemical reactions take place which produce the wonderful aroma. Chewing parsley after eating will take the odour away.
