Delicious June

We Scots have a saying: ‘kissing is out of season when the gorse is out of bloom’. This spiky yellow-flowered bush has been showy for months now, by the cliffs and coves of the east coast beaches. Some Scots say that the smell of gorse is like sweet coconut. But if you get hungry sniffing it, then there’s plenty to inspire Scottish menus this month. Whitefish such as lemon sole are superb eating; crab is at its best. Scotland’s soft fruits are ripening nicely, and the first strawberries are also coming on the market.
